Easy Lowfat Cake Recipe….or is it?

I had a few ladies over last night to chill and relax and thought to myself "I should make that low-fat chocolate cake with pumpkin puree I heard about. How hard can that be?" Fact is, it sounds incredibly easy…the recipe (which I looked up before I started but I guess I didn't "read" it thoroughly) calls for chocolate cake mix and pumpkin puree. TWO INGREDIENTS!! Now, I ask you, how can that go wrong? Here is how it went down...

I placed the cake mix and in a bowl and mixed in the pumpkin puree. I mixed, and mixed. Then I smell it and it smells like PUMPKIN. Then I taste it and it tastes like RAW PUMPKIN! Panic ensues and I run to the computer to read the incredibly simple recipe again and realize I needed to mix in a 15 ounce can of pumpkin and I mixed in a 29 ounce can instead. In comes my event planner instinct and I aim to fix it. The solution? Pour in another bag of cake mix. Stir, smell, taste. Add water…stir, smell, taste, start feeling sick. Start drinking wine and laughing wildly to myself. Luckily, my fabulously supportive mother tells me it ill be fine and I should just bake it and everything will be ok.

I baked the cake for almost an hour and the outside looked like a black, burnt mess. We didn't eat it, in fact I put it aside and made my guests promise never to speak of what they saw at my house that night.

This morning however, I turned the pan upside down and to my surprise the cake looked normal. To my even greater surprise the cake was good!!! It was moist and fudge like and had no taste of raw pumpkin. I guess mom was right…baking solves all!

Here is the recipe for the low fat, low calorie and low in weight watchers points cake:
1 15 ounce can of pumpkin puree
1 box of chocolate cake mix

Mix two ingredients together. Do NOT put eggs or oil. Place a little water if you feel it is too thick. Place in pan of your choice (I chose the bundt pan) and bake for as long as it says to on the box for that size pan. I just sprinkled powdered sugar on top to keep the calories low. Enjoy! Farm Fresh Party Ideas!

This weekend we took a stroll to our local Farmer's Market and the beauty just took my breath away! Fresh produce, local wine, cheese, flowers, dips, fish...be still my foodie heart! This is a one stop shop to make a fresh, clean and LOCAL party. Here are a few finds that will make your event complete:
Choose from a wide variety of Sweet Melissa Dips. These herb mixtures are wonderful mixed with yogurt or sour cream or used as rubs for your slow cooked ribs! Just to make things sweeter, all the herbs and spices are grown on her farm or other local Long Island farms.

The produce was just gorgeous and local so you know where it is coming from. It was so great to talk to the purveyors and discuss how to store the vegetables or how fresh the eggs are. (Yes, they had local eggs which is super awesome because I am ALWAYS looking for fresh local eggs...score!).

Here are a few recipes to use such wonderful ingredients.

Zucchini Pancakes courtesy of Barefoot Contessa at Home

Serves:

10 (3-inch) pancakes

Ingredients

2 medium zucchini (about 3/4 pound)

2 tablespoons grated red onion

2 extra-large eggs, lightly beaten

6 to 8 tablespoons all-purpose flour

1 teaspoon baking powder

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Unsalted butter and vegetable oil

Directions
Preheat the oven to 300 degrees F.


Grate the zucchini into a bowl using the large grating side of a box grater. Immediately stir in the onion and eggs. Stir in 6 tablespoons of the flour, the baking powder, salt, and pepper. (If the batter gets too thin from the liquid in the zucchini, add the remaining 2 tablespoons of flour.)

Heat a large (10 to 12-inch) saute pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When the butter is hot but not smoking, lower the heat to medium-low and drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes on a sheet pan and keep warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. The pancakes can stay warm in the oven for up to 30 minutes. Serve hot.

Corn Salad Courtesy of My Husband
This is my favorite summer recipe and I can eat this everyday.

5 ears of corn

½ med red onion finely diced

handful of basil chiffonade

4 tbsp olive oil

3 tbsp cider vinegar

salt & pepper

Remove husks and silk from corn and blanch in boiling salted water for 3-4 minutes

While blanching set up a bowl large enough to hold the corn and fill with water and ice.

When corn is done, submerge the ears in the ice water to shock and stop the cooking.

Cut kernels off the cob making sure to not cut into the cob.

Combine corn kernels, red onion, basil, olive oil and cider vinegar.

Salt and pepper to taste.

Chill before serving.

be sure to get there early.
To decorate pick up a lovely local bouquet for only $10.00. These blooms are so colorful and gorgeous and I am totally loving the vintage tomato cans they are in. So much so that I found some here to buy.
What a great idea for a backyard wedding!

I think I can, I think I can...

While my culinary school graduate husband is making an amazing meal tonight for a small dinner party I am attempting to contribute and make a grilled watermelon salad. Am I scared? You betcha! In fact I added to my morning mantras: "I can pull of a salad." However, I went to Home Goods last night and bought some decor to dress up the table and hopefully distract our diners from any disaster my salad becomes. Plus I know my hubby's food will blow mine out of the water and make everyone giddy with gourmet fare.

Grilled Watermelon Salad


Ingredients

  • 1/2 (5-pound) seedless watermelon
  • 1/4 cup balsamic vinegar
  • Extra-virgin olive oil
  • Kosher salt (specialty salt is great here, if on hand)
  • 2 cups fresh baby arugula, washed and dried
  • 1 cup goat cheese, crumbled, preferably a French Chevre
  • Fresh finely cracked black pepper

Directions

Stand the watermelon half cut side down on a cutting board and slice away the rind, leaving a solid block of melon. Turn the block on its side and cut it into 8 squares, roughly 3 by 3 inches and 1-inch thick.

Pour the vinegar into a small saucepan and bring to a simmer over medium-high heat. Cook until reduced to a thick syrup consistency. Set aside.

Heat a nonstick grill pan over medium-high heat. Drizzle just enough olive oil over watermelon slices to thinly coat and place on hot grill pan. Grill each side about 2 minutes until grill marks appear; transfer to a plate and season with salt.

To assemble the salads, put about 1/4 cup of baby arugula on a serving plate, followed by a grilled slice of watermelon in the center, and top with a tablespoon of crumbled cheese and another 1/4 cup arugula. Add another watermelon slice and another tablespoon of cheese. Repeat with remaining ingredients. Finish each salad with a very light drizzle of olive oil and balsamic syrup. Dust with black pepper and serve immediately.

Confesion: I can't cook. I can eat with the best of them, but cooking - I leave that to the hubby (I'm not saying I married him solely because he went to culinary school...but it helped).

However, yesterday the better half was out and I was left to fend for myself. We had mushrooms and I remembered eating mushrooms that were stuffed with Alouette, a sweet creamy cheese awesomness. Here is the recipe that is so simple, even I pulled it off.



Alouette Stuffed Mushrooms Recipe

30 min 15 min prep
SERVES 8 -10 (or just you if you are home by yourself)
· 6 ounces of Alouette
· 1/2 cup parmesan cheese
· 4 cartons fresh large mushrooms
· Italian breadcrumbs
· 4 tablespoons melted butter
1. Wipe and de-stem mushrooms.
2. Mix parmesan and herb cheese together.
3. Stuff cheese in mushrooms.
4. Add a pinch of bread crumbs on top and brush top of each mushroom with butter.
5. Bake on 450 degrees for 15 minutes.

Summer is here, well almost. But technicality aside, get out your flip flops (maybe a pedicure first) and celebrate the beginning of summer with family and friends this memorial day weekend! What to eat.
Leave the grilling to the men and whip up some yummy sides. Here are two cole slaw recipes that are tried and true. One supplied by the hubby and the other from my fabulous neighbor.

Asian Slaw

Ingredients

  • 1 head green cabbage, shredded
  • 1/2 head red cabbage, shredded
  • 1 tablespoon salt
  • 1/2 cup rice wine vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1/2 teaspoon chile paste
  • 3 tablespoons creamy peanut butter
  • 1 teaspoon fresh ginger, grated
  • 2 carrots, shredded
  • 1 cup bean sprouts
  • 4 scallions, julienned on the bias
  • Salt and pepper, to taste
  • 2 tablespoons sesame seeds, for garnish

Directions

Toss the cabbage together in a large colander and set in the sink. Sprinkle the cabbage with salt and let stand for 15 minutes. The salt draws out some of its moisture so that the slaw remains crunchy.

In a bowl, whisk together the vinegar, soy sauce, oil, chile paste, peanut butter, and ginger. Toss together with the cabbage, carrots, bean sprouts and scallions; season with salt and pepper. Garnish with sesame seeds before serving.

Super Slaw
6 tablespoons rice vinegar
6 tablespoons vegetable oil
5 tablespoons creamy peanut butter
3 tablespoons soy sauce
3 tablespoons (packed) golden brown sugar
2 tablespoons minced peeled fresh ginger
1 1/2 tablespoons minced garlic

5 cups thinly sliced green cabbage
2 cups thinly sliced red cabbage
2 large red or yellow bell peppers, cut into matchstick-size strips
2 medium carrots, peeled, cut into matchstick-size strips
8 large green onions, cut into matchstick-size strips
1/2 cup chopped fresh cilantro

Whisk first 7 ingredients in small bowl to blend. (Dressing can be made 1 day ahead. Cover and chill. Let stand at room temperature 30 minutes before continuing.)

Combine remaining ingredients in large bowl. Add dressing and toss to coat. Season with salt and pepper and serve.

What to drink.
Ice Tea anyone? The Long Island version has long been associated with quick inebriation but as grown ups maybe we can drink this version a bit slower.
1 part vodka
1 part rum
1 part gin
1 part triple sec
1 1/2 parts sweet and sour mix
1 splash Coca-Cola®
Mix ingredients together over ice in a glass. Pour into a shaker and give one brisk shake. Pour back into the glass and make sure there is a touch of fizz at the top. Garnish with lemon.
What to play.
I'm a big advocator of games. They break the ice and get the fun started quickly. I recently picked up my hubby's Men's Journal and it had an article "Throw a Righteous Bash." Here is what they told us to play and since I aim to be righteous, I'm gonna play it! V:King medieval block game... go figure.
What to listen to.
Nobody exudes the feeling of summer better than Jack Johnson. Maybe it has something to do with his Hawaiian- pro surfer background.


What to wear.
Casual, cool and hip; this outfit is perfect for a hot summer day into night party.
